Pita pockets

Wholemeal Pitta bread with cumin chicken and yogurt dressing.

Pita breads are so versatile. It´s also a lot more fun for kids to explore new foods and prepare there own pitta pocket.  I buy wholemeal pitta breads, look for ones that don´t contain E numbers. We use pita breads for dipping, toasting and pockets. This recipe we all love in our family, everyone fills their own pitta at the table.



Ingredients
(serves 2 adults and 1 child)

2 large free-range chicken breast, cut into small chunks
1tsp ground cumin
1/2 tsp sweet paprika
1/2 cucumber, cut into tiny chunks
handful of mint,parsley and basil roughly chopped 
6 wholemeal Pita breads
lemon wedges, to serve
grated carrot & cherry tomatoes
125g (1 small pot) Greek Yogurt


Mix the cucumber with yogurt, a squeeze of lemon a little mint and season. Cook the chicken with a splash of oil for a couple of minutes, then sprinkle over the cumin and paprika and cook for another few minutes, until the pieces are golden on the outside and cooked through.  Remove from the heat and toss in the fresh herbs, so that they coat the chicken and wilt slightly. Heat the pita breads as per instructions. Serve with grated carrot, cherry tomatoes, cucumber yogurt and lemon wedges for everyone to help themselves.


**When I first introduced my daughter to fresh herbs she took all the ¨green bits¨out of her food.  I love to use fresh herbs all year round and to be honest herbs seem to be the only plants that love my sunny terrace. (I will use them !!) To overcome her green leaf phobia, I started to involve my daughter more with the planting, picking and chopping of the herbs, she is now an expert and she knows her mint from her basil !! great**
